The carbon dioxide may result from natural fermentation, either in a bottle, as with the traditional method (Méthode Champagnoise), in a large tank designed to withstand the pressures involved, or as a result of carbon dioxide injection.
Most Australian sparkling wine is produced from Chardonnay and Pinot Noir or Semillon, but an Australian speciality is the Sparkling Shiraz, a red sparkling wine produced from powerful red Shiraz grapes.
